Course Description: 

The Level 3 Award in Supervising Food Safety in Catering is a qualification aimed at supervisors, team leaders and line managers working in the catering industry. This includes those also working in Care. The qualification is also suitable for those owning/managing a smaller catering business.

Course Contents: 

      At the end of this course, you would be able to:

♦    Understand the role of the supervisor in ensuring compliance with food safety legislation 

♦    Understand the implementation, monitoring and verification of good hygiene practice in food production area 

♦    Understand how to implement food safety management procedures 

♦    Understand the role of the supervisor in staff training and ensuring its effectiveness on food handling area

♦   The importance of food safety management procedures and responsibilities related to food safety legislation

♦   The importance, methods and legal requirements for temperature control

♦   Procedures to control contamination and cross-contamination in food production premises

♦   The importance of high standards of personal hygiene

♦   The design of food premises and equipment

♦   The importance to food safety of microbial, chemical, physical and allergenic hazards

♦   Methods and procedures related to critical control points, critical limits and corrective actions

♦   The role of the supervisor in induction and staff training

♦   Procedures for cleaning, disinfection, waste disposal and pest control


After attending the course and successfully completing the written assessments, candidates receive a Level 3 - Award in Supervising Food Safety in Catering certificate that can be used to provide as an evidence for compliance and audit.
