Course Description: 

This qualification is designed for those working or preparing to work in food businesses where a food safety management system based on Codex HACCP principles is implemented. It provides essential knowledge on the development and application of HACCP-based food safety management systems.

Who should attend: 

The Level 2 Award in HACCP for Catering is a qualification aimed at caterers and other food handlers. The course is intended for candidates already working in catering and those who are preparing to work in the industry. The course will be especially useful for those involved in maintaining HACCP in a catering environment, and for those who are or will be part of a HACCP team.

Course Contents: 

    To have a detailed knowledge and understanding of:

♦   Principles of HACCP

♦   Food Safety Management 

♦   Implementation of HACCP 

♦   Hazards and Controls

♦   Critical Control Points 

♦   Critical Limits and Target Levels 

♦   Monitoring, Corrective Actions, Verification, HACCP Documentation

♦   Knowledge of HACCP, food safety systems, prerequisites, HACCP team, flow diagram, hazard analysis, control measure, risk

♦   Understanding of critical control point, critical limit, target level, monitoring, corrective action, verification and review

♦   Importance of food safety and the requirement for effective food safety management procedures based on HACCP

♦   The need for a systematic approach for food safety.

♦   The benefits of implementing HACCP systems including contributing to a ‘due diligence’ defence

♦   The legal requirement for HACCP including HACCP training

♦   The importance of HACCP training and the role of employees regarding the implementation of HACCP


After attending the course and successfully completing the written assessments, candidates receive a Level 2 Award in HACCP for Catering certificate that can be used to provide as an evidence for compliance and audit.
